Chef Tasting Notes:
• New York: Sweet fuji apples complement the red fruit and hint of cardamom, cinnamon, and clove. The sweetness of the ruby cacao is balanced with the bitterness of cocoa nib and dark chocolate. Amazing fuji apples were used to make this bar. They are incredibly balanced with acid and sweetness. The newly discovered ruby cacao is now considered the "fourth chocolate!" Its pink color and sweet berry flavor are naturally present in ruby cocoa beans.
• Paris: French reserve grade figs with notes of brown sugar, port wine and molasses, complementing nicely the red fruits of the ruby cacao and bitterness of the dark chocolate.As soon as I tried the reserve figs for the first time, I knew that they had to be in this bar. It was as if I had never tasted a fig before. The texture and flavor pair beautifully with the ruby cacao.The reserve grade figs used in this bar have been grown in Provence, France for more than 100 years, these heirloom figs are treated like royalty and rarely seen outside the region. The heat of the sun and the careful eye of our artisan fruit growers bring the figs to peak ripeness to be harvested and dried.
• Tokyo: Toasted genmai rice with sweet matcha tea. Hints of floral and red fruits from the ruby cacao are reminiscent of Japanese tea service. Toasted genmai is one of Flair Chocolatier's favorite ingredients for not only its roasted flavor but also for its distinct texture. Flair Chocolatier's crisps add another delightful crunch. The private reserve matcha used in this bar comes from the First Flush Tencha, picked from the pristine high mountain tea fields in Shizuoka, Japan. The tencha is slowly ground in ancient stone mills to reveal this rare, sweet emerald tea powder. The Emperor's roasted genmai rice used in this bar comes from the Omi Prefecture of Shiga in Japan. Grown in ancient rice fields that have been tended for centuries to yield perfection, this rice is sorted and roasted by hand in small batches.
